Set the Ninja Combi to combi crisp at 400°F for 30 minutes, steaming for the first 10 minutes.
After 30 minutes, remove the potatoes and let them cool for about 5 minutes.
Slit the top of each potato about 3 inches across and scoop out the insides with a spoon, being careful not to damage the skins.
In a bowl, mix half of the cheddar cheese, all of the milk, salt, pepper, and 13 of the sour cream with the potato insides until combined.
Refill the potato skins with the mixture and place them back on the tray.
Set the Ninja Combi to broil at 450°F for 10 minutes.
Remove the potatoes and serve.
