Spoon the filling back into the potato skins, mounding it slightly.
Sprinkle additional cheddar cheese on top of each filled potato.
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through and cheese is melted.
Garnish with extra green onions before serving.
