1

Cut 500 g of chicken breast into strips and then into small cubes about 2 cm in length.

2

Dice 1 medium onion small enough to dissolve in the soup.

3

Grate 2 tomatoes into a pulp using a box grater.

4

Place a large pot on medium-high heat and add 2 tbsp of olive oil.

5

When the oil is shimmering, add the diced onion and sauté for about 5 minutes until translucent.

6

Add the chopped chicken pieces and sauté until they are white all over.

7

Add 3 cloves of minced garlic and cook for about 1 minute until fragrant.

8

Add 2 black limes, 1 small stick of cinnamon, 2 cloves, and 5 cardamom pods to the pot.

9

Sprinkle in 3 tsp of salt, 1 tsp of black pepper, 3/4 tsp of cumin, and 1/2 tsp of ground coriander; mix and fry for about 60 to 90 seconds until aromatic.

10

Add 15 g of tomato paste and sauté for about 2 to 3 minutes until browned and stuck to the pan.

11

Add the grated tomatoes with their liquid to deglaze the pan and stir to dissolve the brown bits.

12

Pour in 2 L of room temperature water and bring to a boil.

13

Once boiling, reduce heat to medium-low and cover the pot; let it simmer for about 25 minutes.

14

After 25 minutes, add 150 g of rolled oats to the pot and stir.

15

Cover the pot again and gently simmer for 20 minutes until the oats have absorbed the broth and thickened the soup.
