1

Make a Tang zong by combining 20 g of flour and 100 g of milk in a saucepan, whisk until smooth, then cook on medium heat until thickened, about 1-2 minutes.

2

Let the Tang zong cool.

3

In a stand mixer bowl, combine 300 g of bread flour, 6 g of salt, 25 g of sugar, 9 g of instant yeast, Tang zong, 1 whole egg, and 110 g of slightly warmed milk (26-30°C).

4

Attach the dough hook and mix on medium speed for 10 minutes until a soft, smooth dough forms.

5

Add 45 g of room temperature unsalted butter and mix for another 5 minutes.

6

Turn the dough out onto a clean surface and fold it over itself to form a ball, then create tension by pulling it towards you.

7

Place the dough in a greased mixing bowl, cover with a tea towel, and let it proof until doubled in size (1-2 hours).

8

Punch down the risen dough and divide it into 6 pieces, roughly 100 g each.

9

Shape each piece into a tight ball by tucking corners and rolling against the surface.

10

Place shaped buns on a lined baking tray and cover with another tray; let them rest for 45-60 minutes until doubled in size.

11

Preheat the oven to 190°C (375°F).

12

Beat 1 egg with 2 tbsp of milk and brush over each bun; sprinkle sesame seeds if desired.

13

Bake for 12-15 minutes until golden brown, then transfer to a wire rack to cool.
