Put 2 liters of water in a pot and add 1 chicken breast and chicken bones.

Add 4 pieces of onion, 2 tablespoons of garlic, and salt to taste, and let cook for 15 minutes before removing from heat.

Add oregano by rubbing it with your hands.

In a bowl, put 4 pieces of bread in chunks and gradually add the broth from cooking the chicken to enhance the flavor of the ají de gallina, then set aside.

Heat oil in a pot over medium heat and add 1 chopped onion.

Once the onion is sautéed, add 2 tablespoons of garlic and 4 tablespoons of ají amarillo paste, and continue to sauté for 2 more minutes.

Once the seasoning is browned, add the shredded chicken.

Blend the soaked bread and add it to the seasoning, stirring well.

Add 1/2 cup of milk and finally add the chopped walnuts, letting it rest for a few minutes before serving.

Serve accompanied by white rice, boiled potatoes, eggs, and olives, and sprinkle with chopped parsley.
