1 cup refined flour (maida)
¾ cup gram flour (besan)
2 tablespoons semolina
4 tablespoons ghee
2 tablespoons sesame seeds
1 teaspoon cumin seed
1 teaspoon turmeric powder
1 teaspoon sugar
Salt to taste
1 tablespoon lemon juice
4 tablespoons desiccated coconut
2 tablespoons fresh coriander chopped
1 inch ginger, chopped
1-2 green chilli, chopped
1 tablespoon oil + for deep frying
Red chilli powder for garnishing

Grind together desiccated coconut, green chillies and ginger into a fine powder.

Add 1 tablespoon oil and mix well and set aside.

In a bowl, add refined flour, ghee and rub it together to get a breadcrumb like texture.

Add gram flour, turmeric, salt, fresh coriander, sugar, semolina, cumin seeds, sesame seeds, lemon juice, and 1 cup water and knead into a stiff dough.

Set aside for 10 – 15 minutes.

Dust some flour on the work surface and roll a small portion of the dough into a thin disc.

Add a tablespoon of the coconut mixture and spread it evenly, fold it into half and then into half to make a triangle shape.

Dock it with a fork, repeat the same process with the remaining dough.

Deep fry in hot oil until golden brown. Drain it on an absorbent paper.

Sprinkle red chilli powder, serve.
