Farsi Puri

1 cup All Purpose Flour (maida)
1/4 tsp turmeric powder
salt to taste
1 tsp black pepper powder
1 tsp ajwain seeds
2 tbsp ghee
1 tbsp ghee (for filling)
1 tsp rice flour
Oil for frying

Make dough: take a bowl, combine apf, salt to taste, ajwain seeds, turmeric powder, ghee, and make dough using water. Make sure dough is soft. Coat with ghee and cover with cheese cloth, keep aside for 15-20 minutes.

Make filling (slurry): combine rice flour and ghee, mix well.

After 15 minutes, make small dough balls and roll each dough ball into a tortilla. Make all tortillas.

Make layered farsi puri: Take a tortilla, brush with ghee + rice flour, and another layer of tortilla. Repeat steps and make 3-4 layers.

Roll the layers tightly and cut into 1 inch pieces.

Take one piece at a time and roll into puri. Make all the puris.

Heat oil for frying.

Drop puris carefully and fry them until golden brown on both sides on low to medium flame.

Fry all puris.
