Whole wheat flour adds fiber while all-purpose flour is more accessible.
caraway seeds

Fennel seeds provide a similar flavor profile.
Add wholemeal rye flour, instant yeast, sugar, and caraway seeds to the stand mixer and mix on low speed.
Add salt, warm buttermilk, and mix everything together using the dough hook until combined.
Use your hand to knead the dough, which will be sticky, wetting your hands as needed.
Leave the dough to prove for about 1-2 hours until it has doubled in size.
Prepare a tray by spraying it with cooking oil.
Shape the dough into one big loaf or two smaller ones and place it on the tray.
Press down caraway seeds on top of the loaf.
Add some water and leave the dough to proof for another 30 minutes to 1 hour.
Preheat the oven and bake the bread for about 10 minutes at 250 degrees Celsius, then lower the temperature.
Once baked, leave the bread to cool for about an hour before slicing.
