Slice zucchini and mushrooms into fairly thin pieces for quicker wilting.
Sprinkle sea salt over the sliced zucchini and mushrooms.
Add tamari to the bowl with the vegetables.
Cover the bowl with a lid and shake to coat the vegetables in salt and tamari.
Let the vegetables sit for about 20 minutes to soften.
Check the zucchini after 20 minutes to see if it has softened.
Massage sea salt into the bok choy to soften it slightly, leaving the white parts crunchy.
Decide not to do anything with the tomato to keep it fresh, but mention it can be added later.
After the zucchini and mushrooms have softened, toss them with the bok choy and tomato.
Prepare a dressing using untoasted sesame oil and toasted sesame oil, noting that toasted sesame oil is not raw.
Mix the dressing together and pour it over the wilted vegetables, tossing to combine.
Serve the mixture over cooked grains like quinoa or rice, or sprouted quinoa for a raw option.
