Peel and chop 5 medium potatoes into chunks.

Boil potatoes with 1 medium onion until fork tender, then let cool to room temperature.

Chop 1/2 cup of cooked crispy bacon into bits and set aside.

Chop 2 Macintosh apples into chunks and drizzle with lemon juice to prevent browning.

Cut the boiled potatoes into rough chunks and add to the bowl with bacon.

Add chopped apples, 1 stick of celery cut into chunks, and chopped green onions to the bowl.

Cut 2 boiled eggs into chunks and add to the mixture.

Season with 1/2 teaspoon sea salt and 1/2 teaspoon black pepper.

Add 2 tablespoons of Dijon mustard and 1/2 cup of mayonnaise or Miracle Whip to the mixture.

Toss all ingredients together until well combined.
