10 raw cashews
1/2 cup veggie broth
1/2 cup sundried tomatoes
2 whole tomatoes
1 tbsp nutritional yeast
1 tbsp olive oil or vegan butter
1 small onion, diced
3 cloves garlic, minced
1 tsp dried Italian herbs
1 tsp garlic powder
1 tsp onion powder
2 cans chickpeas
1 can coconut cream or full fat coconut milk
1/3 cup shredded vegan parmesan cheese

Soak 10 raw cashews in hot water for about 15 minutes while prepping the rest of the veggies.

Prepare the other ingredients: chop sundried tomatoes and dice the onion.

Heat 1 tbsp of olive oil or vegan butter in a pan.

Sauté the diced onion for 3 to 4 minutes until soft and translucent.

Add minced garlic and chopped sundried tomatoes to the pan.

Stir in 1 tsp dried Italian herbs, 1 tsp garlic powder, 1 tsp onion powder, salt, and pepper to taste.

Bring the mixture to a simmer, reduce heat to low, and cook for about 10 minutes until the sauce thickens, stirring occasionally.
