Take a mixing bowl and add 1 cup of oats powder (dry roasted and ground into a fine powder).

Add slightly less than 1 cup of besan (gram flour) to the bowl.

Add 1/4 cup of rice flour to the mixture for crispiness.

Cut a medium-sized beetroot into smaller portions and grind it in a mixer jar into a smooth puree, adding a little water.

Add salt to the beetroot puree as per taste and mix well.

Gradually add water from the bowl where the beetroot puree was kept, mixing until you achieve a lump-free smooth batter, similar to dosa batter; approximately 1.5 cups of water is used.

Let the batter rest for about 10 to 15 minutes.

Heat a pan and add 1 teaspoon of vegetable oil, spreading it around the pan.

Once the oil is hot, add 1 small finely chopped onion and sauté until translucent and aromatic.

Add 1 teaspoon of finely chopped ginger and 1 red chili, sautéing well.

Add grated carrots to the mixture and sauté for a while on medium flame.

Add crumbled paneer (cottage cheese) and sauté for 1 to 2 minutes on medium flame.

Season the filling with salt and crushed black pepper; optionally add red chili powder.

Just before turning off the flame, add finely chopped coriander leaves to the filling.

Grease a non-stick pan with ghee or oil and pour the prepared batter, spreading it evenly like a dosa.

Add a few drops of ghee or clarified butter on top and let it cook on medium flame for about a minute.

Once the batter dries out from the top, place the paneer filling on one side of the dosa and fold it once it turns crisp.

Repeat the process to prepare more chilas or dosas.

Serve hot with spicy green chutney.
