6 cloves of garlic

1 to 2 tablespoons avocado oil
1 tablespoon hot sauce
1 teaspoon dried thyme
1 teaspoon oregano
1 teaspoon sage
1 teaspoon smoked paprika
1 tablespoon Tony's Creole seasoning
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 pound kidney beans (soaked overnight)
32 oz veggie broth
1/2 teaspoon liquid smoke
2 bay leaves

Prep the veggies: dice 1 yellow onion, chop 2 ribs of celery, dice 1 red bell pepper and 1 green bell pepper, mince 6 cloves of garlic, and chop 2 tablespoons of fresh parsley.

Grab a large pot and set the stove to medium heat.

Add 1 to 2 tablespoons of avocado oil to the pot.

Add the diced onions, chopped celery, and diced bell peppers to the pot and sauté until soft, about 8 to 10 minutes.

Add the minced garlic and sauté until fragrant, about 1 minute.

Add 1 tablespoon hot sauce, 1 teaspoon dried thyme, 1 teaspoon oregano, 1 teaspoon sage, 1 teaspoon smoked paprika, 1 tablespoon Tony's Creole seasoning, 1/2 teaspoon black pepper, and 1/8 teaspoon cayenne pepper. Cook for another couple of minutes.

Add 1 pound of soaked kidney beans and 32 oz of veggie broth to the pot and stir to combine.

Add 1/2 teaspoon liquid smoke and 2 bay leaves, then bring the mixture to a boil.

Once boiling, cover the pot with a lid and reduce the heat to simmer. Let it simmer for 1 hour and 15 minutes.

After 1 hour and 15 minutes, remove the lid and bay leaves. Smash some of the beans against the side of the pot or use a potato masher to thicken the mixture.

Let it simmer uncovered for another 15 minutes.

Turn off the heat and taste the mixture, adjusting seasonings as needed, particularly with more Creole seasoning if desired.
