Spanish Chicken with Red Wine Chicken & Chorizo Stew

Grape juice offers sweetness without alcohol.
Heat olive oil in a large skillet and fry the onions until translucent.
Add the red and green bell peppers and stir-fry.
Add the chorizo and continue cooking until the meat releases oil.
Add a pinch of salt and paprika, then fry the chopped garlic for 1-2 minutes.
Add the olives and pour in the tomato paste.
Add the washed and drained butter beans and gently stir to avoid breaking the beans.
Add the chicken thighs with skin on.
Preheat the oven to 390 degrees Fahrenheit.
Transfer the chicken into a baking dish if not using a stove-to-oven pan.
Pour the vegetable mixture over the chicken.
Bake for 40 minutes.
Check the temperature with a thermometer; it should read 170 degrees Fahrenheit.
Broil on medium heat for 10 minutes to brown and crisp the skin.
Garnish with parsley, using dry leaves if fresh is unavailable.
Turn off the oven and let the chicken rest inside for 10 minutes.
