Spritz oil on a casserole dish.

Add 1 package of Boursin cheese to the dish.

Add all the cherry tomatoes harvested from the garden.

Drizzle with extra virgin olive oil.

Add 1 clove of freshly minced garlic.

Sprinkle in a big pinch of kosher salt and a good amount of freshly ground black pepper.

Chop jalapenos and add them to the dish instead of red pepper flakes.

Preheat the oven to 400°F.

Bake in the oven for 20 minutes.

Salt boiling water for the pasta.

Reserve at least 3/4 cup of pasta water.

Use a potato masher to carefully smash the tomatoes after baking.

Mix in spinach and fresh basil after smashing the tomatoes.

Add grated Parmesan cheese and mix everything together until well combined.

Add a little bit of reserved pasta liquid as needed to bring the sauce together, using about a half cup in total.

Plate up and serve.
