1/2 cup sour orange juice
1/4 cup olive oil
1 to 2 teaspoons salt
1 teaspoon black pepper

ground cumin
garlic powder
onion powder
parsley flakes
thyme
1 head of garlic (10 to 12 cloves)
1 sweet Spanish onion

Combine 1/2 cup sour orange juice, 1/4 cup olive oil, 1 to 2 teaspoons salt, 1 teaspoon black pepper, dry oregano, ground cumin, garlic powder, onion powder, parsley flakes, and thyme in a mixing bowl.

Stir the ingredients and let sit for 5 to 10 minutes to hydrate the dry spices.

Taste the marinade for salt and acidity, adjust as needed.

For the sauce, smash 10 to 12 cloves of garlic and a sweet Spanish onion in a mortar.

Add the sour orange juice to the smashed garlic and onion and set aside.

Heat olive oil in a skillet over medium-high heat.

Add thinly sliced onions to the skillet and cook covered for about a minute.

Add the garlic mixture to the skillet and cook for another 30 to 40 seconds.

Remove from heat and let the sauce rest before serving.
