Traditionally made with a simple corn dough and filled with cheese, these arepas reflect the agricultural heritage of the area. In modern times, variations include different fillings such as meats and vegetables, making them a versatile dish loved by many.

Grilled vegetables offer a nutritious alternative.
Prepare 250 g of precooked yellow corn flour and 100 g of all-purpose flour in a bowl.
Add 2 tablespoons of grated panela and 5 tablespoons of whey to the flour mixture.
Melt 40 g of butter and add it to the mixture along with half a teaspoon of salt.
Gradually add milk to the mixture while mixing until you achieve the desired consistency, being careful not to make it too watery.
Knead the dough for about 5 minutes until smooth and soft, then let it rest for about 30 minutes.
In a separate bowl, crumble 300 g of queso cuajada by hand, or you can grate or blend it.
Add 1 teaspoon of sugar to the cheese and mix well.
Weigh out 100 g portions of the dough and shape them into balls.
Take a 40 g piece of cheese and place it in the center of the dough ball, then seal it and shape it into a patty about 1 cm thick.
Heat a skillet and grease it with butter, then place the arepas in the skillet.
Cook the arepas for 5 minutes on one side, then flip them and cook for another 5 minutes on the other side, adjusting the heat to avoid burning.
After cooking, let the arepas cool slightly to help them hold their shape.
