Divide the yolks from whites keeping them a whole. Put each yolk in an own bowl or cup.

Pour the whites in a deep bowl, add ¼ tsp of salt and whisk or mix with a blender well until stiff.

Cover the bottom of baking tray with parchment paper and brush it with vegetable oil.

Divide the beaten whites into 3 equal servings on the baking tray at a distance from one another. Make a hollow with a spoon in the centre of each portion, salt a bit and sprinkle with black pepper.

Bake the whites in the oven heated to 350°F /180°C for 5 minutes.

In 5 minutes place one yolk into each portion of whites and bake at 350°F / 180°C for 3 minutes more.

Serve your orsini eggs hot.
