Add a small amount of olive oil to a large bowl and set aside.
In the bowl, add flour, salt, and olive oil together and whisk to combine.
Add yeast and warm water, mixing until loosely combined, avoiding over mixing.
Use a KitchenAid stand mixer with the dough hook attachment to knead the dough, starting on speed number two for one minute, then increase to speed number four for 7-8 minutes.
If the dough sticks to the bowl, add up to three tablespoons of flour; if too dry, add a few drops of warm water.
Once finished, the dough should be smooth, sticky, and stretchy. Form it into a ball and divide into two to three equal parts.
Place the dough in the reserved bowl, cover with plastic wrap or a damp cloth, and let proof for one hour in a warm environment.
After proofing, season a 12.5-inch cast iron skillet with olive oil, cornmeal, oregano, and salt.
Take half of the dough and stretch it out, letting gravity help, until it reaches about a quarter inch up the sides of the skillet.
Spread pizza sauce over the stretched dough, then add fresh grated mozzarella cheese, pepperoni, and cooked crumbled Italian sausage.
Add canned black olives and diced green and red bell peppers, then top with more cheese.
Cook on medium heat until the bottom of the crust is done, about 10 minutes.
Preheat the oven to 525°F (broil) and finish cooking the pizza in the oven for around 6 minutes, or until the cheese is melted to your liking.
For the second pizza, repeat the stretching and topping process, adding parmesan cheese, mozzarella cheese, pepperoni, bell peppers, olives, and pineapple.
