½ cup mirin
3 tablespoons sake
5 tablespoons white sugar
½ cup soy sauce

Over a medium heat, add the sugar, mirin and sake to a saucepan. Stir well, and continue to do so until the sugar has dissolved.

Then add the soy sauce. Turn up the heat, and continue stirring and bring to a boil.

Reduce the heat back to medium and simmer for 20 minutes, the sauce will begin to thicken.

Leave to cool before transferring to a jar or suitable container. As it cools it'll thicken more.

You can use it straight away.
