Potato Sagu

4-5 medium potatoes, boiled and peeled
2 tbsps gram flour
2 tbsps oil
1 tsp mustard seeds
¼ tsp asafoetida (hing)
2 green chillies, chopped
10-15 curry leaves
1 large onion, chopped
1 medium carrot, peeled and roughly chopped
¼ cup green peas, shelled
Salt to taste
½ tsp turmeric powder
2 tbsps chopped fresh coriander leaves + for garnish

Take gram flour in a bowl, add ½ cup water and mix till a smooth mixture is formed.

Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add asafoetida, green chillies, and curry leaves and mix well.

Add onion, mix and cook till translucent. Add carrot, green peas, and salt and mix well. Cover and cook for 3-4 minutes.

Add turmeric powder, mix and cook for 1 minute.

Add the gram flour mixture, mix and add 1½ cups water and mix well.

Mash the potatoes and add into the mixture and mix till well combined. Stir in ½ cup water, cover and cook on medium heat for 4-5 minutes.

Add coriander leaves and mix well. Transfer into a serving bowl, garnish with coriander leaves and serve hot with puris.
