Ginger - 1/4 inch piece Finely Chopped
Curry Leaves - Few
Coriander Powder - 1/2 Tsp
Red chilli Powder - 1/2 Tsp
Hing - 1/4 Tsp
Turmeric Powder - 1/4 Tsp
Salt - As Required
Mustard - 1/8 Tsp
Urad Dal - 1/8 Tsp
Channa Dal - 1/8 Tsp
Cumin Seeds - 1/8 Tsp
Coriander Leaves - Few

Boil the potatoes until soft, then peel and mash them.

In a pan, heat oil and add mustard seeds, urad dal, channa dal, and cumin seeds. Allow them to splutter.

Add finely chopped ginger, green chilli, and curry leaves to the pan and sauté for a minute.

Add chopped tomatoes and cook until they soften.

Stir in the mashed potatoes and mix well.

Add coriander powder, red chilli powder, hing, turmeric powder, and salt. Mix everything together and cook for a few minutes.

Garnish with coriander leaves before serving.
