Potato Sagu

4 small potatoes
2 tbsp besan flour
2 tbsp oil
1/4 tbsp mustard
1/4 tbsp cumin seeds
1 tbsp urad dal
curry leaves
1 dry chilli
4 green chillies
1 onion
asafoetida
1 tomato
turmeric powder
1/2 tbsp red chilli powder
3/4 tbsp coriander powder
salt
2 cups water

Boil the potatoes until tender, then peel and mash them.

In a pan, heat oil and add mustard seeds, cumin seeds, and urad dal. Allow them to splutter.

Add chopped onions, green chillies, and dry chilli to the pan and sauté until the onions are translucent.

Stir in curry leaves, turmeric powder, asafoetida, and chopped tomato. Cook until the tomato softens.

Add the mashed potatoes, besan flour, red chilli powder, coriander powder, and salt. Mix well.

Pour in water and stir to combine. Let it simmer until the desired consistency is reached.
