water - 2 cup
carrot - 1
beans - 5 to 6
peas - 1/4 cup
oil - 2 tbsp
mustard - 1/2 tsp
cumin - 1/4 tsp
urad dal - 1 tsp
chana dal - 1 tsp
onion - 1
green chilli - 4
curry leaves
coriander leaves
besan flour - 2 tsp
salt

Boil and smash the potatoes.

Chop the carrot, beans, and onion.

In a pan, heat oil and add mustard seeds, cumin, urad dal, and chana dal.

Once they splutter, add chopped onion and green chillies, and sauté until golden brown.

Add the chopped carrot, beans, and peas, and stir well.

Pour in water and bring to a boil.

Add the smashed potatoes, curry leaves, and salt, and mix thoroughly.

Sprinkle besan flour to thicken the curry and stir well.

Garnish with coriander leaves before serving.
