Prep the whole cauliflower by taking off the stems and cutting the base for stability.

Boil water in a large pot, enough to submerge the cauliflower completely.

Once boiling, add 2 tablespoons of salt and 1 teaspoon of turmeric to the water.

Carefully add the cauliflower to the boiling water using a spatula.

Boil the cauliflower for 10 minutes to blanch it, not to cook it fully.

Remove the cauliflower from the boiling water and set it aside to cool down.

In a blending jar, combine 1 inch of ginger, 3 garlic cloves, 1 green chili, and 1/2 cup of fried onions to make a masala paste.

Add 1/4 cup of yogurt (or 1 tomato for vegan), 1/4 teaspoon of turmeric, 2 teaspoons of Kashmir red chili powder, 1 teaspoon of cumin powder, 2 teaspoons of coriander powder, 1/2 teaspoon of cinnamon, 1 mace flower, 1/4 cup of soaked cashews, 1 teaspoon of salt, 1 teaspoon of sugar, and 2 tablespoons of melted butter (or oil for vegan) to the blending jar.

Blend the ingredients with a little water (about 1/4 cup) to achieve a smooth paste.

Coat the cooled cauliflower with the masala paste, using a baking tray lined with aluminum foil.

Preheat the oven to 200°C (about 400°F).

Pour half of the masala mixture into the cauliflower upside down to let it soak in.

Use a brush to gently rub the masala into the cauliflower and then coat the top with the remaining thicker masala.

Drizzle melted butter over the coated cauliflower before roasting.

Roast the cauliflower in the oven for 30 minutes.

After 30 minutes, check the cauliflower and bake for an additional 10 to 15 minutes for more color.
