mozzarella cheese

Shallow fry sausages in a little olive oil.
Cook mushrooms in the fat released by the sausages.
Slice eggplant into 1 cm thick slices.
Add cooked mushrooms to the sausages to cool down.
Drizzle a little more olive oil and spread it across the surface of the pan.
Turn the heat down to medium and cover the pan to cook the eggplant for about 5 minutes.
Slice one large tomato per tortilla pizza into approximately half cm slices.
Slice mozzarella into half cm slices, one bowl per tortilla pizza.
Prepare cooked ham trimmings, cutting into smaller pieces if desired.
Turn the eggplants around after 3-4 minutes to check for doneness; they should be translucent and easily pierced.
Spread a little olive oil in the pan, then add the egg mixture to create a base.
Place a tortilla in the pan, followed by tomato slices, oregano, and mozzarella cheese.
Add ham on top of the cheese, then place another tortilla on top.
Press down with hands to secure the layers.
Pour more egg mixture around the edges to bind everything together.
Turn the heat back on to medium and cover the pan to cook for about 6 minutes.
Check if the pizza can be turned by gently shaking the pan; if it moves, it's ready to flip.
Grease a flat plate with olive oil, place it on top of the tortilla pizza, and flip it over to cook the other side.
