Leek Asparagus Quiche

1½ cup (190 g) All-purpose flour
½ cup (113 g) Butter (unsalted, chilled, and cubed)
1 large Egg yolk
½ teaspoon Salt
¼ cup Water (chilled)
2 cups (200 g) Leeks (washed and finely chopped)
2 cups (250 g) Asparagus (trimmed and finely chopped)
1 medium Garlic (minced, divided)
2 tablespoon Olive oil (divided)
3 Eggs (large)
½ cup (120 ml) Whole Milk
½ cup (120 ml) Heavy cream
2 tablespoon All-purpose flour
2 tablespoon Parmesan (plus more for top)
4 tablespoon (60 g) Gruyere cheese
4 tablespoon (60 g) Cheddar cheese (plus more for top)
¼ cup Parsley (chopped)
½ teaspoon Kosher salt
¼ teaspoon Black pepper
¼ teaspoon Nutmeg (freshly grated)

Prepare the quiche crust by mixing the flour, butter, egg yolk, salt, and chilled water until a dough forms. Roll out and fit into a quiche dish.

Preheat the oven as per the quiche crust instructions.

In a skillet, heat olive oil and sauté the leeks, asparagus, and garlic until tender.

In a bowl, whisk together the eggs, whole milk, heavy cream, flour, Parmesan, Gruyere, Cheddar, parsley, salt, pepper, and nutmeg.

Add the sautéed vegetables to the custard mixture and combine well.

Pour the filling into the prepared quiche crust.

Bake in the oven until the quiche is set and golden on top.
