Spatchcock the chicken by removing the spine and flipping it over to flatten it out.
Marinate the chicken with Bertolli extra virgin olive oil and rub herbs all over the chicken and under the skin.
Heat a 12-inch cast iron skillet and add Bertolli olive oil, then place the chicken skin side down to crisp the skin.
Remove the chicken and set it aside.
Add more Bertolli olive oil to the pan, then add potatoes and onions, allowing them to fry and caramelize.
Once the onions caramelize and the potatoes gain texture, place the chicken back in the pan skin side up.
Pour the chicken juices from the marinade into the pan.
Roast in the oven at 425°F for 30-40 minutes, checking the internal temperature of the chicken to reach 165°F.
Prepare vegetables by drizzling them with Bertolli extra virgin olive oil, salt, and pepper, then toss them.
Grill the vegetables on a hot grill pan until grill lines appear and they become sweet.
Drizzle more Bertolli olive oil over the finished dish before serving.
