This dish is a simple yet flavorful breakfast or tapas option, showcasing the rich flavors of garlic and olive oil. Traditionally enjoyed in Spanish homes, it has gained popularity in various brunch menus worldwide, often served with crusty bread to soak up the delicious oil.

Add 2 cloves of roughly chopped garlic and a pinch of sea salt to a mortar.
Add 2 tablespoons of chopped parsley to the mortar.
Pound the garlic and parsley together until a paste-like texture forms.
Add 2 tablespoons of extra virgin olive oil to the mortar and mix until well combined, then set aside.
Heat a small to medium-sized fry pan over medium heat and add 60 milliliters of extra virgin olive oil.
Thinly slice 2 large cloves of garlic and set aside.
Crack 2 cage-free organic eggs into a small bowl to avoid broken yolks or shells.
Once the oil is hot but not smoking, add the sliced garlic and mix continuously to coat in the oil.
After about 30 seconds, when the garlic is lightly browned, add the eggs to the pan, incorporating the garlic slices with the eggs.
Fry the eggs for 1 to 2 minutes until a golden crust forms underneath, without moving them around.
Splash some hot olive oil over the eggs for a few seconds to cook the tops without overcooking the yolks.
Gently remove the eggs from the pan, shaking off excess oil, and transfer them to a serving dish.
Season the eggs with sea salt and freshly cracked black pepper.
Top the eggs with the parsley and garlic sauce before serving.
