1 cup cooked quinoa
3 tablespoons extra virgin olive oil
2 cloves garlic
1 tablespoon fresh ginger, grated
3 tablespoons fresh lemon juice
1 teaspoon ground cumin
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 tablespoon tarragon, chopped
1 tablespoon dill, chopped
1 tablespoon mint, chopped
1 tablespoon cilantro, chopped
1 tablespoon parsley, chopped
2 cups arugula
2 green onions, sliced
1 hatch green chili pepper, diced
1/2 cup walnuts, chopped

Start with cooked quinoa.

Make a Ginger Citrus vinaigrette in a jar: add extra virgin olive oil, garlic, fresh ginger, fresh lemon juice, ground cumin, sea salt, and fresh ground black pepper.

Put the lid on the jar and shake to mix the vinaigrette.

Chop herbs: tarragon, dill, mint, cilantro, parsley, and arugula, or pulse them in a food processor.
