Creamy White Chili

1 lb ground chicken
1 medium onion, chopped
2 cloves garlic, minced
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chilies
4 cups chicken broth
1 cup heavy cream
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup fresh cilantro, chopped
1 cup shredded Monterey Jack cheese

In a large pot, heat a little oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and ground chicken to the pot. Cook until the chicken is browned and cooked through, about 7-10 minutes.

Stir in the diced green chilies, ground cumin, chili powder, salt, and black pepper. Cook for another 2 minutes to combine the flavors.

Add the white beans and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Stir in the heavy cream and let it heat through for about 5 minutes, stirring occasionally.

Taste and adjust seasoning if necessary.

Serve hot, garnished with chopped cilantro and shredded Monterey Jack cheese.
