Start by covering the lentils with water and add a pinch of salt.
Add olive oil to a pot and bring it to a simmer.
Add whole garlic cloves to the pot for flavor.
Wait for the water to boil, which takes about 1-2 minutes.

Prepare bacon by placing it on a cooling rack tray to collect the fat.
Preheat the oven to 375°F for the bacon.

Cut organic carrots into planks and then into sticks without peeling them.
Dice the onion by removing the stem and peeling it, then making horizontal cuts before dicing.
Add tomato paste to the pot and stir it in, checking for dryness.
If the mixture looks dry, add half a cup of water to adjust the consistency.
Strain the bacon fat using a fine mesh strainer while it's still hot.
Add the strained bacon fat back to the pot with the vegetables.
