Achari Rice, originating from India, is a flavorful dish inspired by the spices used in Indian pickles (achar). It combines the essence of pickling spices with rice, creating a unique and aromatic meal. Traditionally served in Indian households, it has gained popularity globally, often enjoyed as a comforting side or main dish.

Start by taking large green chilies and cutting them from the top to remove the seeds inside.
Fill the chilies with salt and let them sit for an hour to draw out moisture, then wash them.
Prepare the rice by rinsing it and setting it aside.
Chop the onion finely.
Heat 5-6 tablespoons of oil in a large pot over medium heat.
Add the chopped onion and sauté until it turns brown.
Once the onion is brown, add a little water to prevent burning and continue to sauté until the color develops.
Add salt to taste and mix well.
Add 1/2 tablespoon of cumin seeds, 2-3 whole dried red chilies, and 1 clove to the pot.
Add a flower of cardamom for aroma and flavor.
Stir in the achar gosht masala and mix well with the onions and spices.
Add the prepared green chilies into the pot and sauté briefly.
Pour in 2 glasses of water, bring to a boil, then reduce the heat to low.
Cover the pot and let it simmer for 8-9 minutes until the water is absorbed and the rice is cooked through.
Check the rice to ensure it is tender and the water has evaporated.
Once done, serve hot with a side of curry.
