Start by preparing a marinade for the shrimp with 2 tablespoons of tequila and the juice of 2 limes.
Add about 1/4 cup of avocado oil to the marinade along with a pinch of cumin and 1/4 teaspoon of salt; mix well.
Place the cleaned shrimp into a bag, pour the marinade over the shrimp, seal the bag, and toss to coat.
Let the shrimp marinate for no more than 30 minutes to prevent the lime from cooking them.
After marinating, thread the shrimp onto skewers for grilling.
Preheat the grill and place the skewers on it; grill for about 2-3 minutes on each side until they are nearly cooked through.
Remove the shrimp from the grill and set aside; they will finish cooking in the quesadilla.
Prepare the quesadillas by laying down a flour tortilla on a flat surface.
Sprinkle a layer of cheese (queso quesadilla) on one half of the tortilla.
Add the grilled shrimp (about 2 skewers worth) on top of the cheese, along with raw Spanish onion and a little cilantro.
Fold the tortilla over to cover the filling.
Melt butter in a sandwich press or griddle; apply some melted butter to the outside of the tortilla.
Place the folded quesadilla in the press and cook for about 3-4 minutes at 350 degrees until golden and crispy.
Remove the quesadilla from the press, cut, and serve.
