Banana Sweet Chilli Sauce

Originating from Thailand, Banana Sweet Chilli Sauce showcases the country's love for balancing sweet and spicy flavors. This sauce is often used as a condiment for grilled meats and seafood, enhancing dishes with its unique taste. In modern cuisine, it has gained popularity beyond Thailand, inspiring variations across the globe.
Decide how hot you want your sauce: 1 pepper for mild, 2 for classic heat, and 3 for extra hot.
Blitz all ingredients except the sugar in a high speed blender until smooth.
Add the blitzed sauce along with the sugar into a pan and heat gently, dissolving the sugar.
Bring to the boil, stirring, then simmer for 10 minutes.
Keep an eye on the pan to prevent boiling over.
Wash and sterilize your bottles in a warm oven for 10 minutes.
Take the sauce off the heat, allow to cool for 10 minutes then pour into the prepared bottles, leaving an inch gap at the top.
Allow the sauce to cool in the bottles for 10 minutes to disperse air bubbles.
Top up the bottles with the remaining sauce and screw the lids on top.
