Soak the giant Greek white beans overnight in cold water.
Boil the soaked beans in water with a whole sprig of rosemary, a sprig of sage, and four fresh bay leaves.
Cook the beans until tender, then drain and let cool.
Heat olive oil in a pan over low heat.
Slice the red onion and add it to the warm olive oil with chili flakes, salt, and black pepper.
Add rough chopped garlic and another sprig of rosemary to the pan.
Cook the onion and garlic mixture until softened and fragrant, then remove the bay leaves and sage from the mixture.
Combine the cooked beans with the olive oil mixture while they are still warm to absorb the flavors.
Make ribbons of fresh zucchini and add to the salad along with arugula.
