Greek yogurt provides creaminess with fewer calories.
Start by measuring 4 oz of soy curls and place them in a bowl.
Boil water in a kettle and pour it over the soy curls to cover them.
Add soy sauce, onion powder, garlic powder, smoked paprika, chili powder, ground cumin, a pinch of salt, and black pepper to the soy curls; stir to combine.
Set the soy curls aside for about 10 to 15 minutes to rehydrate.
Once rehydrated, strain the soy curls and squeeze out excess liquid, placing them back in the bowl.
Preheat the oven to 375°F.
Spray a baking tray with oil and add cornstarch to the soy curls; toss to coat evenly.
Spread the soy curls on the tray, ensuring they have room, and spray a little more oil on top.
Bake the soy curls in the oven for about 20 minutes, stirring halfway through.
While the soy curls are baking, heat olive oil in a pan over medium-high heat.
Add minced garlic to the pan and wait for it to start sizzling.
Add sliced red onions (about half an inch thick) to the pan with a bit of salt and sauté for about a minute.
Add sliced bell peppers (orange, green, and red, also about half an inch thick) to the pan, adding a bit of salt and stirring.
After a few minutes, add chili powder, smoked paprika, ground cumin, and black pepper to the peppers and onions; stir to combine and let cook until the peppers are soft but still have a bite.
Remove the peppers and onions from heat and check on the soy curls in the oven.
Warm corn tortillas and prepare to serve with Pico de Gallo and guacamole; garnish with fresh cilantro and lime.
