Honey, Lemon, Garlic Chicken Kabobs

MediterraneanXXmain
60 min
medium
4 servings
Servings4
1 lb chicken breast, cut into 1-inch cubes
1/4 cup honey
1/4 cup lemon juice
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tbsp olive oil
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 onion, cut into 1-inch pieces
Skewers (wooden or metal)
1

In a bowl, mix honey, lemon juice, minced garlic, salt, black pepper, paprika, and olive oil to create the marinade.

2

Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

3

If using wooden skewers, soak them in water for 30 minutes to prevent burning.

4

Preheat the grill to medium-high heat.

5

Thread the marinated chicken, red bell pepper, green bell pepper, and onion onto the skewers, alternating between the chicken and vegetables.

6

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

7

Check the internal temperature of the chicken; it should reach 165°F (75°C).

8

Remove the kabobs from the grill and let them rest for a few minutes before serving.

9

Serve the kabobs warm, optionally with a side of rice or salad.
