Clean and prepare the truchas (trout).

Season the trout with salt and coat with flour.

Add the ham slices on top of the trout and pour in the white wine.

Cover the pan and let it simmer until the trout is cooked through.

Serve the trout with a drizzle of tomato sauce, roasted peppers, and boiled or sautéed potatoes.
