Soak 1 cup of lentils (approximately 250 g) for half an hour, cleaning them well to remove any stones.
Drain the lentils and cook them in 1 liter of water with a bit of salt, stirring occasionally until they are well cooked, which will take about 20 to 30 minutes.
Blend 2 cloves of garlic and 4 tomatoes with 1 cup of water until smooth.
Chop 1/2 onion and optionally prepare bacon and plantain, cutting them into pieces.
In a skillet, fry the plantain until golden brown and then set it aside.
Fry the bacon in the same skillet until it is well browned and then set it aside.
In the same skillet, sauté the chopped onion until softened, then add the blended tomato mixture and cook well.
Once the lentils are cooked, add the bacon, fried plantain, and some chopped cilantro for flavor.
If you prefer a soupier consistency, add a bit more water.
As a final touch, poach some eggs in the lentils, showing two methods: one directly in the lentils and the other by briefly cooking them in a skillet before adding them to the lentils.
Let the eggs cook in the lentils for a minimum of 5 minutes before serving.
