Clean the lentils and rinse them with fresh water.

Transfer lentils into a saucepan and add half of the chopped onion, garlic cloves, and two bay leaves (optional).

Cover lentils with 7 cups of water and let soak for 45 minutes.

Peel and chop the potato into small cubes and soak in water.

Chop the remaining half of the onion, tomato, and chile serrano.

After 45 minutes, set the saucepan on medium heat and cook the lentils for 20 minutes.

Remove the piece of onion and garlic cloves from the lentils.

Add the chopped potatoes (and carrots if desired) to the lentils and cook for another 15 minutes.

In a small saucepan, heat oil and sauté the chopped onion for a couple of minutes.

Add the chile serranos and tomatoes to the sautéed onion and cook for another couple of minutes.

Check if the lentils and potatoes are soft, then transfer the sautéed mixture to the lentils.

Add salt or chicken bouillon and black pepper to taste, then mix.

Add chopped cilantro and let it cook for a couple of minutes before serving.

Serve with a squeeze of lime juice and oregano, alongside crackers.
