Southern Skillet Cornbread

2 boxes Jiffy cornbread mix
2 eggs
1/2 stick softened butter
1 cup buttermilk
1/4 cup sour cream
1 can cream corn
3 pieces of bacon

Preheat the oven to 400°F.

In a cast iron skillet, add 3 pieces of cold bacon and place it on the stove to render the fat while you prepare the cornbread mix.

In a mixing bowl, combine 2 boxes of Jiffy cornbread mix with 2 eggs.

Add 1/2 stick of softened butter to the mixture.

Pour in 1 cup of buttermilk. If you don't have buttermilk, substitute with 1/4 cup of sour cream and regular milk.

Add 1 can of cream corn to the mixture.

Mix all the ingredients until well combined.

Once the bacon has rendered and the skillet is hot, pour the cornbread mixture into the skillet over the bacon grease.

Bake in the preheated oven for 20-25 minutes or until golden brown on top.
