Creamed Kale

1 bunch kale
9-10 cloves garlic
1/2 cup chopped onion
1 red jalapeno
1 can coconut milk
coconut oil
salt

Remove stems from kale and discard them.

Chop kale leaves into smaller pieces.

Chop red jalapeno for heat and color.

Chop garlic (9-10 cloves) and onion (1/2 cup).

Heat a small amount of coconut oil in a large pan.

Add chopped onion to the heated oil and sauté until it starts to color.

Add chopped garlic and red jalapeno to the pan and sauté for a few minutes until fragrant.

Season with salt to taste.

Pour in one can of coconut milk and bring to a simmer.

Add the chopped kale to the pan and cover to steam and cook down.

Let the kale simmer for about 5-6 minutes until soft, stirring occasionally.

Turn off the heat and check the consistency; it should be a little wet but not soupy.

Serve the creamed kale over cooked quinoa and top with chopped peanuts if desired.
