Slice about half a cup of celery and a quarter cup of celery root using a mandolin or knife.

Prepare aioli by whisking egg yolks, olive oil, and mustard.
Plate the aioli separately for people to dress their own salad.
Toss the ambrosia apples in vinaigrette, ensuring they are well coated.
Toss the celery and celery root in the same vinaigrette, adding about a teaspoon.
Toss salad greens in vinaigrette as well.
Slice ham thinly and scatter around the plate.
Scatter toasted walnuts, which have been toasted in olive oil and seasoned with sea salt, on the plate.
Garnish with fresh parsley and drizzle with additional vinaigrette before serving.
