Heat olive oil in a medium sized pot.

Add the chopped onions to the pot and sauté until translucent and edges start to brown.

Peel and cut potatoes into cubes.

Add 2 tablespoons of butter and sauté for about 3 more minutes to extract flavors from the garlic.

Pour in 5 or 6 cups of chicken or vegetable stock (or water with 2 bouillon cubes).

Add 1 cup of heavy cream and season generously with salt and black pepper (about 1 teaspoon each).

Cook on medium heat for about 15 to 20 minutes until potatoes are easy to break with a fork.

Use a hand blender to blend the soup until there are no lumps left, about 2 or 3 minutes.
