This comforting soup is not only a staple in many households but also celebrated for its warming properties and health benefits. Over time, it has inspired various regional adaptations, with some versions incorporating additional ingredients like bread or cheese, making it a versatile dish loved across Germany.

Greek yogurt reduces calories while maintaining creaminess
Finely chop a large yellow onion.
Heat olive oil in a medium sized pot.
Add the chopped onions to the pot and sauté until translucent and edges start to brown.
Peel and cut potatoes into cubes.
Once the onions are ready, crush a whole head of garlic and add it to the pot.
Add 2 tablespoons of butter and sauté for about 3 more minutes to extract flavors from the garlic.
Add 1 teaspoon of dried thyme and sauté for 2 or 3 more minutes.
Add the cubed potatoes to the pot and mix with the onions and garlic, sautéing for 3 more minutes.
Pour in 5 or 6 cups of chicken or vegetable stock (or water with 2 bouillon cubes).
Add 1 cup of heavy cream and season generously with salt and black pepper (about 1 teaspoon each).
Mix everything together properly and cover the pot with a lid.
Cook on medium heat for about 15 to 20 minutes until potatoes are easy to break with a fork.
Use a hand blender to blend the soup until there are no lumps left, about 2 or 3 minutes.
Taste the soup and adjust seasoning with more salt and black pepper if needed, mixing again.
Cook for another minute or two after adjusting seasoning.
Serve the soup garnished with homemade bread croutons and finely chopped chives, or with roasted bacon bits, cheddar cheese, and chives.
