2 cups room temperature water

In a medium-sized mixing bowl, add 2 cups of room temperature water and 1/2 teaspoon of salt. Stir until the salt dissolves.

In small batches, add 2 cups of white corn flour to the water mixture and use your hands to combine, breaking any clumps.

Continue adding corn flour until all is combined, then knead the dough for about 5 minutes.

Allow the dough to rest for an additional 5 minutes.

Remove enough dough to roll into a tennis ball size, then flatten it into a circular disc about 1/2 inch thick and 4 inches in diameter.

Brush each arepa with olive oil using a basting brush.

Heat a frying pan over medium heat and place up to 4 arepas in the pan, brushing the top side with olive oil.

Cook each side for 5 minutes until golden brown, then remove to a wire cooling rack.

In an air fryer or regular oven set to 325 degrees, bake the arepas for 12 minutes or until they begin to rise.

Check for doneness using the tap test; if no drum sound is heard, bake for an additional 2 minutes.

Cut open the arepa with a bread knife to form a pocket, then coat one side with cilantro mayo and add cheese and sliced tomato.
