Prepare 4 cups of day old rice or freshly cooked rice with less water than usual.

Cut 5 to 6 strips of bacon into bite-sized pieces.

Slice 0.5 pound of cabbage into desired size.

Thinly slice 3 to 4 green onions, separating the whites and greens.

Smash and finely chop 3 cloves of garlic.

Blanch 0.5 cup of frozen peas and 0.5 cup of frozen carrots in the microwave for 1 minute and drain well.

Crack 4 large eggs into a small container, add a pinch of salt, and beat well.

In a small container, mix 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp shaing wine, 0.5 tbsp chicken boung powder, and 1/4 tsp white pepper.

In a large wok or pan, heat 1 tbsp of oil over medium-high heat and add the bacon, cooking for about 2 minutes until browned.

Add the white parts of the green onions and garlic to the bacon and sautรฉ for about 1 minute.

Add the cabbage and stir fry for about 1 minute until it starts to soften, then remove it from the wok and set aside.

In the same wok, add 2 tbsp of oil and heat over high heat, then pour in the beaten eggs and cook for about 30 seconds until the bottom is slightly brown, then flip and cook the other side for another 30 seconds.

Push the eggs to one side, add 1 tbsp of oil to the empty space, and then add 4 cups of cooked rice, moving the eggs on top of the rice and breaking them into smaller pieces.

Stir fry everything together for about 2 minutes until mixed, then add the cabbage, bacon, peas, and carrots back into the wok and mix for about 1 minute.

Pour the sauce around the edges of the wok and let it caramelize for about 20 seconds before stirring everything together for about 2 minutes until coated with the sauce.

Taste and add more salt if needed, then turn off the heat and add the green onions and 2 tsp of toasted sesame oil, mixing well.
