Prepare masa dough: mix 2 cups masa flour with a little salt and pepper, then add 1.5 cups lukewarm water, adjusting as needed for consistency.
Once the dough sticks together, it's ready.
Flip the potatoes in the pan to ensure even browning, then set aside.
Smash 4 garlic cloves and add them to the pan for flavor infusion.
Add prepped vegetables (potatoes, soy chorizo) to the pan and cook until browned, about 2-3 minutes.
Whisk together eggs with a splash of milk for fluffiness.
Add the egg mixture to the pan, stirring until the liquid evaporates.
Make tortillas by forming masa dough into pucks and pressing them to shape, using a heavier object for even circles.
Cook tortillas on a preheated comal or tortilla warmer until browned.
Assemble tacos: add generous amounts of chorizo to the tortillas, top with sour cream, salsa, and parmesan cheese.
