3 cloves garlic, minced
2 tablespoons canola oil
4 tablespoons butter
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon fresh cracked black pepper
1 cup gruyere cheese, shredded
2 tablespoons lime vinaigrette
1/4 cup fresh basil, chopped

Split the leeks down the middle, leaving the end intact.

Rinse the leeks under water.

Slice the leeks.

Cut the red potatoes in half and slice them thinly.

Rinse the tomatoes.

Cut the tops off the plum tomatoes, toss them in oil, salt, and pepper, and roast them in the oven.
