One Pan Chicken and Orzo

1 cup orzo
2 tbsp olive oil
2 cups chicken broth
1 lb skinless boneless chicken thighs
1 tsp salt
1 tsp black pepper
1 lb skinless boneless chicken thighs
1 tbsp apricot jam
3 cloves garlic
1 tbsp soy sauce

Line a baking sheet with baking paper.

Add orzo to the lined baking sheet.

Drizzle olive oil over the orzo.

If using water, add chicken soup mix and salt to the water, then add black pepper.

Mix the orzo with the water or broth mixture.

Spread the orzo evenly on the baking sheet.

Place skinless, boneless chicken thighs on top of the orzo.

Mix apricot jam, garlic, and soy sauce together.

Spoon some of the jam mixture over each piece of chicken, reserving some for later.

Bake uncovered in the oven until done.

Once out of the oven, drizzle the reserved sauce over the chicken.
